When Birds Eye® asked me to try out a variety of their new Steamfresh® protein blends, I was downright curious.
What’s a protein blend?
As it turns out, it means a flavorful mix of grains, black beans, and veggies that can be enjoyed as a side dish or part of an entree.
I LOVE the idea of heating up a quick & easy protein-filled side that can turn a bland meal into a *wow* dinner.
I layer it on top of a spinach salad, and viola– a well-balanced meal in less time than it takes me to write a blog post.
To complement the Southwest flavor of the protein blend, I whipped up a chipotle ranch dressing.
Cool & spicy at the same time.
Drizzled over the top, it makes a beautiful presentation at the dinner table.
Enjoy this dish as a weeknight meal, so simple to toss together in a hurry.
- 5 cups of spinach
- 1 package, Birds Eye® Steamfresh® Protein Blends, Southwest Style
- 1/2 cup, ranch dressing
- 1 chipotle pepper, pureed in food processor
- chopped cilantro, for topping
