I’m starting to get a little paranoid over here. It seems like everyone around us is sick. Double ear infections, strep, sinus infections… yum, right? Let’s talk about food. No really, it’s been crazy. The last thing I want for my Alyssa’s first week of school is a round of antibiotics. I live in fear of the Summer Cold. Yes, it’s a proper noun. Show some respect.
So we get our rest (ha) and try to eat right, and help out our sick neighbors by bringing them soup. Delicious oh-so-easy Lemon Chicken Rice Soup.

I shredded rotisserie chicken and added quick-cook white rice. Convenience is the name of the game in the summertime.
- 1 rotisserie chicken
- 2 cartons, Swanson Chicken Broth
- 2 cups, uncooked white rice
- 3 stalks celery, chopped
- 3 carrots, grated and chopped
- 1 Tablespoon, dried thyme
- 1 lemon, juiced
