Coming upon school being out I need to start preparing for the family to be eating more at home. I swear my grocery bill doubles on days they are not in school. I swear they eat WAY more each meal at home than anywhere else!
And don’t forget the snacks. We can’t live without them, but it’s a love/hate relationship. The kids seem to “need” snacks every 7 seconds, but to be honest, I love them too! Shh…
INGREDIENTS NEEDED TO MAKE THIS ZUCCHINI CHIPS RECIPE:
- 1 lb. zucchini
- ½ cup grated Parmesan cheese
- ¼ cup apple cider vinegar
- 1 Tablespoon garlic powder
- salt to taste
DIRECTIONS TO FOLLOW WHEN DEHYDRATING ZUCCHINI:
- Preheat oven to 225 degrees.
- Slice zucchini into ¼′ slices, using mandolin or knife.
- Toss with Parmesan, vinegar, garlic powder, and salt.
- Lay out flat on a baking sheet covered with parchment paper.
- Bake for 90 minutes, or until crispy.
So I gave these zucchini chips a go. Light, crispy, salty, crunchy. Dare I say…guilt-free?
I mean, forget the healthy part about eating your vegetables. Anything I can shovel by the handful into my mouth that tastes like Parmesan, garlic and a little tart from the vinegar… yes!
You can zip through this recipe by slicing your zucchini with a mandolin. A knife works fine, just remember to go slow and try to keep the thickness consistent.
Once you have the zucchini sliced up you just need to stir up the seasoning and then spread them out on a pan. This recipe is super simple, takes very little prep and passes off as “potato chips”! Put this in the win column!
