One of my biggest mom struggles– and I know you can identify!–is getting dinner on the table every night. I meal plan, I grocery shop on a schedule, and still… there will inevitably be a night when making dinner seems like an exhausting task. Especially after hours of activities, homework, and driving all over town.
Thankfully, I’ve come up with a list of super simple, go-to meals for those busy weeknights, and this is one of our favorites.
How about a night without whining at the dinner table? Yes, please!

handy tools to use when making this BLT salad recipe:
- serrated knife – slice things without crushing them, sharp, dishwasher safe
- salad bowl – conversation piece, large size, easy to clean
To save yourself even more time, you could cook up some bacon on the weekend. Just save a few strips from breakfast. They’ll stay in the fridge until you need a side salad for pizza night!
It’s SO helpful to have a go-to meal that’s ready in minutes. Dinner plans can change in an instant, and savvy moms know that easy meal ideas save the day.

Is a BLT healthy?
Not really. You can make some good choices with a whole grain bread, light mayo and easy on the bacon. Overall, it is not the best choice you can make for a sandwich, but it’s SO good!
What goes good with BLTs?
To me that means potato chips and a dill pickle spear. Besides that a cole slaw, potato salad, or macaroni salad is a good side dish. You can also serve with tomato soup and saltines!
Which bacon is the healthiest?
Your best bacon choice is uncured, reduced-sodium center cut bacon. Wait, don’t judge it yet – I swear it still tastes just like real bacon!
