We are absolutely loving this delightful twist on pancakes. It’s making mornings extra special around my house.
These Hot Cocoa Pancakes with Greek Yogurt have been on repeat for weeks in our house, and I’m so excited to share them with you!
INGREDIENTS NEEDED TO MAKE THESE HOT COCOA PANCAKES:
- 1 cup Bisquick, plus 2 Tablespoons
- â…“ cup Greek yogurt
- 1 egg
- ¼ cup cocoa powder, unsweetened
- 1 packet hot cocoa mix
- 1 teaspoon vanilla
- ¼ cup milk, add more as necessary
- 1 cup whipped topping
- powdered sugar, for dusting
HOW TO MAKE THESE HOT COCOA PANCAKES:
- Heat up skillet, prep with non-stick spray.
- Combine all ingredients (except whipped topping + powdered sugar) in medium-sized bowl. Add more milk if needed to make a pourable mixture.
- Use a tablespoon to add batter to skillet. When bottom is cooked, flip pancakes over until done.
- Allow pancakes to cool, skewer 5 mini pancakes, adding layers of whipped topping.
- Top with a sprinkle of powdered sugar & serve immediately.
Start out with Bisquick and add cocoa powder, one packet of hot chocolate mix, and Greek yogurt… plus the classic pancake ingredients.
Mix it up (batter will be thick), and cook on a skillet. I used a tablespoon to make the mini pancakes. Kids LOVE foods made mini-sized, and adding them to skewers makes this fun breakfast extra special.
