I have gotten into a good routine of prepping snacks on the weekend for the week ahead. This has helped my kids gain some independence with snacking, all while saving my sanity from them asking me every 5 minutes!
Please do not think that I making all homemade snacks (who has time for that?). I usually make one or two homemade items and then mix it in with some store bought items. These granola bars are super simple to make, and the kids can even make their own snack!
INGREDIENTS NEEDED TO MAKE MIXED BERRY GRANOLA BARS:
- 2 cups cereal (granola or flake cereal with granola clusters, like Honey Bunches of Oats)
- ½ cup oats
- ½ cup dried fruit (mixed berries & raisins)
- ¼ cup ground flax seed
- ½ cup nut butter
- ½ cup honey
- 1 teaspoon vanilla
- ¼ teaspoon salt
- ¼ teaspoon cinnamon
HOW DO YOU MAKE GRANOLA BARS FROM SCRATCH:
- Heat up honey & peanut butter in pot on low-medium heat.
- Add vanilla, salt, and cinnamon. Stir to combine.
- Pour liquid into dry ingredients, and toss until combined.
- Lay out in small square pan prepped with wax paper.
- Chill in fridge for one hour, then cut into bars. Enjoy!
This recipe simply requires mixing and pressing into a pan. If you want your kiddos to help with this one you can easily heat the peanut butter and honey in the microwave.
Try different dry ingredients! Different varieties of cereal, switch up the dried fruit to nuts or chocolate chips, or even add different spices to your liking! This recipe is very versatile!
