Healthy Protein Granola
I love granola as such a simple way to add some protein and fiber into my diet. However, I have tried every store bought granola and I find them to be just alright. They always have too much of this or that.
The obvious solution was to make my own, exactly how I like it. Hence, this protein granola. Making homemade granola allows you to control the sugar (which granola often has a lot of), and add whatever mixings you love. Nothing worse than getting to the bottom of the container with all your least favorite parts staring at you.
INGREDIENTS NEEDED TO MAKE HEALTHY PROTEIN GRANOLA:
- 3 cups rolled oats
- ½ cup pecans, roughly chopped
- ½ cup walnuts, roughly chopped
- ¼ cup pumpkin seeds
- ½ teaspoon salt
- ½ teaspoon cinnamon
- ¼ teaspoon ginger
- ¼ teaspoon all-spice
- â…“ cup maple syrup
- ½ cup coconut oil, melted
- 1 teaspoon vanilla essence
DIRECTIONS FOR MAKING HEALTHY PROTEIN GRANOLA:
- Preheat oven to 350ËšF (176ËšC).
- In large bowl, mix together rolled oats, pecans, walnuts, pumpkin seeds, salt, cinnamon, ginger and all-spice.
- In a small bowl, mix together maple syrup, coconut oil and vanilla essence. Pour this mixture into the large bowl, mixing together with a wooden spoon to ensure dry ingredients are thoroughly coated.
- Line a large baking tray with parchment paper and spread out granola in an even layer on the tray.
- Bake in the middle of the oven for 20-25 minutes, until golden. Time may vary depending on your oven so check regularly to ensure granola doesn’t burn.
- Remove tray from oven and leave for an hour to cool. This helps the granola set further. Once cool, break into pieces and store in an airtight container.
Once you have your wet ingredients mixed well then coat your dry ingredients thoroughly. You want to make sure all the dry ingredients get coated, so they bake up properly in the oven.
After the granola cools and sets you can break it up and store it in an airtight container.
Making this at home allows you to make the proper amount you will use in a week’s time and allows you to add exactly what you want into your granola. No more picking out the nuts or seeds you do not like.
