pumpkin pancake recipe
Pumpkin Spice…do I even need to write anymore about this recipe? Seriously though, these pancakes will really spice up your breakfast routine and make for such a nice Fall treat. They are super easy to make with just the 5 ingredients, and they do not require anything crazy (just mix and pour into a pan)!
I like to make them in a mini size for the kiddos. If there are leftovers, I can just pop them into the microwave for a minute and they can snack on them!
INGREDIENTS NEEDED TO MAKE THIS PUMPKIN PANCAKE RECIPE:
- 2 cups, Bisquick
- 1 15 oz can, pumpkin puree
- 1 egg
- 1 cup milk (add more to desired consistency)
- 1 Tablespoon pumpkin pie spice (add more to taste)
- Optional: nuts, syrup, and yogurt for topping
HOW TO MAKE THIS PUMPKIN PANCAKE RECIPE:
- Preheat skillet or griddle to medium heat (or 350 degrees).
- Whisk all ingredients in a medium-sized bowl.
- Once skillet is hot, spray lightly with non-stick cooking spray to prep.
- Ladle pancake batter onto griddle using ¼ size measuring cup.
- When edges are cooked and top middle no longer looks shiny (about 3-5 minutes), flip pancakes over.
- Allow pancakes to cook for another 3 or so minutes (until middle bounces back slightly to the touch), then remove from skillet.
- Serve with toppings!
Prepare your skillet and then whisk up the 5 ingredients. Once your skillet is hot, add your batter and cook away! These really are so easy! We then like to top ours with syrup (you know, the maple and pumpkin combo) but you can also add whipped cream, nuts, yogurt, or a cream cheese frosting. You can’t go wrong!

Frequently Asked Questions
Can pumpkin pancake batter be made ahead of time and stored in the refrigerator? If your batter is made with baking powder you can make it ahead, but if it is made with baking soda it should be cooked immediately. If using baking powder, you may need to add a bit more once you are ready to cook.
Can you make pumpkin pancakes as belgian waffles too? You definitely can! Use about ⅓- ½ cup of batter for each waffle.
What is pumpkin spice made of? Pumpkin pie spice is generally a blend of ground cinnamon, nutmeg, ginger, cloves, and sometimes allspice.
