We’re in the heart of summer now, and I’m all about quick, light dishes that come together in minutes. This chicken fried rice has become one of our favorites.
INGREDIENTS NEEDED TO MAKE THESE CHICKEN LETTUCE WRAPS:
- 1 lb chicken breasts
- 1 cup teriyaki sauce
- 4 cups frozen (or fresh) stir fry vegetables
- 4 cups quick cooking white or brown rice
- 1 head butter lettuce
HOW TO MAKE THESE ROTISSERIE CHICKEN LETTUCE WRAPS:
- Place chicken in bottom of instant pot. Pour 1 cup of teriyaki sauce on top.
- Cook chicken for 12 minutes.
- Remove chicken from instant pot, place on cutting board.
- Add vegetables to instant pot, saute for 3-5 minutes, or until tender crisp.
- Meanwhile, slice or shred chicken.
- Heat up rice according to package instructions.
- Add rice and chicken back to instant pot, stir to mix.
- Add about ¼ cup of chicken mixture to each butter lettuce cup.

I tucked the shredded chicken fried rice into butter lettuce cups, and served with soy sauce. It was a big hit! My kids loved the flavor of the rice, and I thought the lettuce wraps really added a lightness to the meal. Perfect for summer!
Not to mention, only took minutes to cook. Seriously, this meal was freezer to table in about ten minutes. Can’t beat that! I’ll definitely be relying on this in the fall, when school starts up again.
