Easy Corn Fritters Recipe
Guys, the warm weather is upon us. Here in the Midwest, the birds are singing, the grass is growing, and we’re uncovering the patio set –always my favorite part! As a home cook, I love to use spring and summer produce in my dishes as soon as the weather starts to turn. It gets the family in the mood for months of sunshine, bonfires. and fresh recipes featuring in-season produce.
Gorgeous, right? April and May are actually your best months for picking delicious, sweet corn. Who knew?!
This corn tasted as fresh as it looks. Crispy off the cob, and subtly sweet in the corn fritters I cooked up. Corn fritters are a classic side dish that often steals the show. They’re that good!
INGREDIENTS NEEDED TO MAKE CORN FRITTERS WITH CORNMEAL:
- 1 ½ cups, sweet corn (rinsed from a can or cut from cob)
- ½ cup, yellow cornmeal
- ¾ cup, plain Greek yogurt
- 3 Tbsp, olive oil, divided
- 3 Eggs, separated
- Scallion, finely chopped
DIRECTIONS TO MAKE CORN FRITTERS WITH CORNMEAL:
1. In a large bowl combine corn, cornmeal, yogurt, 2 tablespoons of the oil, 1 egg yolk, and scallion. Mix just until combined.
2. In a separate bowl beat egg whites until they form soft peaks. Fold egg whites into corn mixture. Discard remaining yolks.
3. Place a large nonstick skillet over medium heat. Add 1 teaspoon of the oil. When hot, spoon four heaping tablespoons of batter into the skillet to make four fritters. Cook until golden brown on the bottom, 2 to 3 minutes; flip gently and allow to cook through, about 2 more minutes. Remove from heat.
4. Repeat with remaining batter.
5. Serve with sour cream or plain Greek yogurt for dipping.
Simply heat up a skillet, and combine sweet corn (cut right off the cob), cornmeal, some Greek yogurt, and few eggs (separated).
Add some olive oil to the hot skillet. toss in some chopped scallions to the fritter mix, and add tablespoon-size dollops to the skillet.
That’s it. The skillet does the work from here. When they turn golden brown on side, flip, and cook until both sides are good to go.

I served these with a main dish of chicken and a side salad when we had some neighbors over for dinner, and it was a hit. The fritters are so flavorful, and you can really taste the fresh corn.
I love the combo of the crispy, fried outside and the sweet corn inside of the fritter. It’s way more than just a side dish. Perfect for entertaining or a casual summer meal. And don’t skip the dipping sauce!
