We love to entertain, especially as the seasons change here in the midwest, and we love to keep it casual. Most of our friends have (little) kids, and the easiest plan wins every time.
That’s why we love to serve these chicken tacos. We dubbed them “crazy easy” because that’s the best description for them. They take literally minutes to prep, and everyone can customize their own toppings.
INGREDIENTS NEEDED TO MAKE CHICKEN TACOS WITH ROTISSERIE CHICKEN:
for tacos
- 16 corn tortillas, can sub in flour tortillas
- 1 rotisserie chicken meat, shredded
- 2 cups black beans, drained & rinsed

- 1 cup pico de Gallo or chopped tomatoes, optional
- 1 cup queso fresco, crumbled, optional
- ¼ cup cilantro, chopped, optional
- limes, quartered, optional
- avocado, sliced, optional
HOW TO MAKE CHICKEN TACOS WITH ROTISSERIE CHICKEN:
- Add small handful of shredded chicken to tortillas and top with a couple spoonfuls of black beans.
- Top with optional ingredients, and add your own! Enjoy!
Once you chop/shred up your chicken, chop your toppings and set out the “taco bar” you are all set to have a fantastic Mexican meal!

My kids will literally eat anything they get to “make” themselves. It is such as easy way to get them on board with new foods.

I love putting the chicken breasts in the crockpot, dumping a bit of my favorite salsa (whatever I have on hand) and letting it cook on low all day. When I am ready to prepare the tacos I shred up the chicken and sprinkle it with taco seasoning.
