It just isn’t summer without fresh, juicy watermelon. I cut up slices for snacking all day long. And it’s delicious in all sorts of recipes, like smoothies, side dishes, and salads… like this one!
INGREDIENTS TO MAKE THIS WATERMELON RADISH SALAD:
- 4 cups spring greens
- 2 cups watermelon, chunks
- 1 cup radishes, thinly sliced
- ½ cup feta cheese, crumbles
- sprinkle fresh, cracked pepper, optional
- 1 tablespoon olive oil vinaigrette dressing, optional
HOW TO MAKE THIS WATERMELON RADISH SALAD:
- Divide up spring greens onto 2 plates/bowls.
- Add watermelon chunks.
- Add radish slices.
- Sprinkle feta cheese on both.
- Add pepper and drizzle of dressing if desired.
