I love making cookies with cake mix! It cuts out a few steps (and ingredients) and makes moist, fluffy cookies that taste just like cake. With Fruity Pebbles Post Cereal, Betty Crocker Super Moist White Cake Mix, and Betty Crocker Whipped Frosting Milk Chocolate from Jewel Osco, you can make these fun cookies in just minutes!
INGREDIENTS NEEDED FOR THESE FRUITY PEBBLE COOKIES WITH YELLOW CAKE MIX:
- 1 box Betty Crocker Super Moist White or Yellow Cake Mix
- 1 egg
- ¼ cup butter, softened
- 4 oz cream cheese, room temperature
- 1 cup Fruity Pebbles, Post Cereal
- ½ cup sprinkles, divided
- ½ cup Betty Crocker Whipped Frosting, Milk Chocolate
DIRECTIONS TO MAKE THESE FRUITY PEBBLE COOKIES WITH YELLOW CAKE MIX:
- Preheat oven to 350 degrees.
- Mix up Betty Crocker Super Moist White Cake Mix, egg, butter, and cream cheese in a mixer.
- Gently fold in half of the sprinkles and Fruity Pebbles, Post Cereal with a spoon.
- Using a mini cookie scoop, drop rounded tablespoons onto a prepared cookie sheet.
- Bake for 12-14 minutes, or until edges are just turning golden brown.
- Allow cookies to cool.
- Add a dollop of Betty Crocker Whipped Frosting, Milk Chocolate to half of the cookies, then make sandwiches. Roll the edges in a small, shallow bowl or plate with the remaining sprinkles.
Start by whipping together the Betty Crocker Super Moist White Cake Mix, cream cheese, butter, and one egg. Once the batter is completely combined, use a spoon to gently fold in the Fruity Pebbles and some sprinkles. The idea is to incorporate the cereal and sprinkles while still maintaining their shape. Who would have thought that adding fruity pebbles to cake mix would be so fun and tasty?!
Next, drop rounded tablespoons (I love to use a mini cookie scoop for this job) onto a prepared cookie sheet and bake for 12-14 minutes or until just golden brown on the edges.
Once the cookies have cooled, add a dollop of Betty Crocker Whipped Frosting, Milk Chocolate to one half of the cookies.
