I knew the SCHARFFEN BERGER Semisweet 62% cacao dark chocolate would be just divine in these hot chocolate mix cookies. The natural flavors of chocolate, fruit, spice, floral, tobacco, leather, woody, and earthy tones are delicious with the sweet marshmallows and cocoa mix.Â
Ingredients for Hot Chocolate Mix Cookies
- ½ cup butter softened
- ½ cup sugar
- ½ cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 ½ cups flour
- 2 packages hot cocoa mix (separate out mini marshmallows by sifting, save them for topping)
- ½ teaspoon salt
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- 2 oz. SCHARFFEN BERGER Semisweet 62% cacao dark chocolate, roughly chopped, plus ¼ cup for topping
- ½ cup mini marshmallows
Recipe Tips:
- Be sure to soften the butter either in the microwave or by setting the butter out for 20-30 minutes before making the recipe. This helps the butter to mix easier with the sugars.
- To remove tiny marshmallows from cocoa mix, use a sifter or strainer. Pour mix into strainer over a small bowl, then dump cocoa into mixing bowl of dough.
- If you don’t have cocoa mix on hand, you can make your own with SCHARFFEN BERGER 100% cacao dark chocolate cocoa powder, plus a bit of milk and sugar as you would use to make hot chocolate.
- When rolling the marshmallows in the dough, be sure to pinch the dough around completely & roll the dough into a good ball shape to keep the marshmallows in place.
- Use high quality chocolate, such as SCHARFFEN BERGER, for a rich, decadent taste in these cookies.
- Topping the cookies with additional (tiny) marshmallows and SCHARFFEN BERGER Semisweet 62% cacao dark chocolate gives a nice presentation to the cookies and keeps the ingredients uniform throughout the batch.
- If you prefer a firmer, crunchier cookie, omit the marshmallow filling and just bake these cookies with the toppings listed.
Hot Chocolate Mix Cookies

Ingredients
- ½ cup butter softened
- ½ cup sugar
- ½ cup brown sugar

- 1 ½ cups flour

Instructions
- Preheat oven to 350 degrees.
- Cream together butter and sugars.
- Add egg & vanilla, incorporate.
- After sifting mini marshmallows out of mix, add flour, cocoa mix, salt, baking soda, and baking powder to bowl. Mix until just combined.
- Add chopped SCHARFFEN BERGER Semisweet 62% cacao dark chocolate to bowl and gently mix in.
- Using a cookie dough scoop (see photos), scoop out dough balls and push a couple of mini marshmallows into each, pinch dough around to keep in place.
- Lay cookie dough balls out on parchment paper-prepped baking sheet.
- Once all cookie dough is scooped out, add tiny marshmallows (from mix) and extra chocolate to tops of cookie balls, gently pressing to stick to dough.
- Bake for 9-11 minutes.
- Allow to rest for 5 minutes, then enjoy!
