INGREDIENTS NEEDED TO MAKE THESE CHOCOLATE ZUCCHINI MUFFINS:
- 1 large egg
- ¼ cup, vegetable oil
- ¾ cup greek yogurt
- ¼ cup, shredded zucchini
- 1 cup flour
- ½ cup sugar
- ½ teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ cup cocoa powder
- ¼-1/2 cup of milk
- ½ cup chocolate chips, divided
DIRECTIONS TO MAKE THESE CHOCOLATE ZUCCHINI MUFFINS:
- Preheat oven to 350 degrees.
- Combine egg, corn oil, zucchini, and Greek yogurt with a mixer.
- Whisk together dry ingredients: flour, sugar, salt, baking soda, and baking powder.
- Add dry ingredients to wet ingredients.
- Add in milk and mix to desired consistency. (may need up to ½ cup of milk)
- Fill each cup of a prepared muffin pan ½ full.
- Bake for 14 minutes, or until a toothpick poked in the middle of a muffin comes out clean.
- Allow to cool for 5 minutes and enjoy!
