I love Chinese and Thai food, but used to be too intimidated to make the recipes at home. Some of the recipes have a lot of ingredients or ingredients I am not familiar with. With this stir fry recipe I have found a way to make easy stir fry at home, and even with a Mexican twist!
This stir fry is so fresh, light and better for you than restaurant food! With the fresh peppers (and any other veg you want to add) and cauliflower rice you really get a well balanced meal that tastes so great!
INGREDIENTS NEEDED TO MAKE THIS MEXICAN STIR FRY:
- 1 Tbsp, Oil
- 1 lb, chicken breast, chopped
- 2-3 bell peppers (any color), cut into thin slices (buy pre-cut at the store to save time!)
- 1 cup chicken broth
- 1 packet, taco seasoning
- 3 cups, cauliflower (or brown or white) rice (I love the steam-in-bag variety)
- Optional, for serving: chopped cilantro, shredded cheese, sour cream
HOW TO MAKE THIS MEXICAN STIR FRY:
- Add oil to a large skillet, heat to medium.
- Add chicken to skillet and cook for about 10 minutes or until golden brown on sides.
- Add veggies, chicken broth, and taco seasoning. Stir to combine, then cook for another 10 minutes, stirring occasionally until chicken is cooked through.
- Meanwhile, heat up cauliflower rice.
- Serve stir fry atop rice with Mexican-themed toppings, as desired.
Once you have your oil heated you can toss in your chicken until cooked through. Then you add your veggies, stock and seasoning. While all that is cooking nicely, prepare your rice, and it will all be ready to devour! Simple ingredients are sure to make this a hit for the whole family, and it really couldn’t be easier to make!

Yes, I always add a sliced onion and garlic to the veg saute and sprinkle just a tad of Wondra Flour over the liquid after removing the meat & veg to tighten it up a bit.
