Keto Spinach Salad
I love caprese salad in any form. Tomatoes, fresh mozzarella, and balsamic vinaigrette…YUM!
The great thing about foods that are traditionally seasonal is that you can eat it until you’re going to burst and then you can have a little break during the “off season”. Caprese salad is traditionally a summer food, as that is when tomatoes are in season. Don’t tell, but I sneak this in during the winter when I am really missing it!
INGREDIENTS NEEDED TO MAKE SPINACH CAPRESE SALAD:
salad
- 10 oz fresh spinach
- 1-2 cups, cherry tomatoes, halved (I love the medley variety with all the different colors)
- 2 cups, fresh mozzarella balls, halved (Ciliegine size)
- handful of basil, thinly sliced
dressing
- 4 Tablespoons balsamic vinaigrette
- 4 Tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
HOW TO MAKE SPINACH CAPRESE SALAD:
- Lay out spinach in bottom of serving container.
- Top with cherry tomatoes, mozzarella, and finally basil. Lay each ingredient out in rows.
- Whisk together dressing ingredients. Pour dressing over top of salad.
- Serve and enjoy!
If you are going for presentation, lay the spinach out on a platter. If you just want to toss and eat, use your salad bowl. Once you get the spinach down, lay out your tomatoes and mozzarella and then sprinkle it with basil. *To cut basil into ribbons roll up the leaves and then slice across the roll.
Drizzle on that dressing and enjoy! I won’t tell if you made this one just for you. It is SO GOOD! If you want to add protein, go with some chicken. It’s an easy way to make salad your dinner and keep it keto friendly.
