Our family loves fancy bread. We have our favorite banana bread recipe, in the fall we have pumpkin bread on the counter at all times, but we didn’t have a good bread for the holiday season…until now!
This Gingerbread Loaf Cake is full of delicious holiday spices and is the perfect breakfast/lunch/anytime bread to have at the ready. Plus, it looks so beautiful, you can certainly give this as a gift for the holidays!
Easy Gingerbread Loaf Recipe
INGREDIENTS :
- 1 box spice cake mix
- 1 cup flour
- 1 cup sugar
- ½ teaspoon salt
- 1 cup sour cream
- ½ cup water
- ½ cup molasses,
- 3 eggs
- 1 teaspoon cinnamon
- 1 ½ teaspoon ginger
- ¼ teaspoon nutmeg
Cream Cheese Frosting
- ½ cup, cream cheese
- 1 cup, powdered sugar
- ½ tsp, vanilla
HOW TO MAKE GINGERBREAD LOAF CAKE:
- Preheat oven to 350 degrees.
- In a mixer, blend together sugars and eggs.
- Add sour cream and molasses, blend.
- Add remaining dry ingredients and mix on med-low until just combined (scrapping down sides of bowl as needed).
- Prepare a loaf pan by buttering sides and lightly sprinkling flour all over inside. Tap out excess flour.
- Pour in batter and bake for 60-65 minutes or until top middle is just solid.
- Allow to cool for 20 minutes.
- Meanwhile, whisk up frosting.
- Once loaf pan is cool enough to hold comfortably, run a knife along sides of pan.
- Gently flip loaf onto serving tray.
