I would like to kiss whoever decided to make cookies into bars. You get the all the delightfulness of the cookie with a fraction of the work! Sugar cookie bars are a great way to make large quantities for bake sales, gifting to neighbors, having a party, etc…
INGREDIENTS NEEDED TO MAKE SUGAR COOKIE BARS:

- ½ cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon butter extract
- 2 oz cream cheese
- 2 ½ cups flour
- ¾ teaspoon baking powder
- ½ teaspoon salt
cream cheese frosting
- 8 oz, cream cheese (softened)
- 2 cups, powered sugar
- 1 tsp, vanilla
- sprinkles
HOW TO MAKE SUGAR COOKIE BARS WITH CREAM CHEESE FROSTING:
- Preheat the oven to 375 degrees.
- Prep an 8×8 cake pan with parchment paper. See photo.
- Cream together butter and sugar until fluffy.
- Add in egg, vanilla, butter extract, and cream cheese and mix until they are combined.
- In a medium sized bowl, whisk together flour, baking powder and salt.
- Slowly add in flour mixture to the wet mixture, while stirring until everything is combined.
- Press the batter into a greased 8×8 baking dish and spread it out evenly with a rubber spatula. Be sure to push it all the way out to the corners.
- Bake for 17-19 minutes or just as the edges start to turn golden brown.
- Allow the bars to cool completely.
- Meanwhile, mix together all your ingredients for the frosting until creamy.
- Carefully, pop whole (cooled) cookie bar out of pan and peel off parchment paper. Lay out on cutting board.
- Spread frosting over top of cookie bar.
- Top with sprinkles.
- Cut into squares* and serve.
