No kids? It goes over pretty well with adults too. I should know… I ate about three last night.
See those quick oats up there? Yummy, fill-you-up fiber, disguised as streusel topping. I love to make special snacks for my kids to take to school, and muffins are at the top of the list. You can fill them with any wholesome (or not) ingredients that you want, and they taste like love.
Plus, at home, you can drizzle them with salted caramel and take it over the top.
Caramel simply should not exist without sea salt stirred in. The sweet & salty makes these muffins so delicious.
I used a boxed spice cake mix and store-bought caramel sauce. Could I have made it all from scratch? OF COURSE. But then it wouldn’t be a quick ‘n easy way to make snacks your kids will devour. And let’s face it, you’d never make them that way. Who is stirring up homemade caramel on a weeknight? Not me.
Tuck one in your kid’s backpack or enjoy a couple after dinner. Makes the transition back into routine just a little bit easier.
Salted Caramel Streusel Muffins
Spice cake muffins topped with streusel & salted caramel.
Ingredients
- 1 box, spice cake mix ( plus 3 eggs, ½ cup, vegetable oil, and 1 cup water for mix)
- ½ cup sugar
- ½ cup flour
- ½ cup quick cooking oats
- 1 Tablespoon, cinnamon
- ½ cup, caramel sauce
- 1 Tablespoon, sea salt

Two Tablespoons of streusel topping? That must be a mistake. I made these and That was WAY too much. I didn’t have enough topping and when baking, it was too heavy for the batter and made a huge mess in my oven. Now that I’m looking back at the photo here it must be 1T? Or maybe even 2t?
