Cake Mix Popcorn
We love seeing movies as a family & we love popcorn!
When we have family time at home, we’re definitely popping a big bowl of popcorn to share with the kiddos. They are always asking for fun mix-ins like candy and pretzels. Recently, I made a batch of cake batter popcorn and it was huge hit in our house!
INGREDIENTS NEEDED TO MAKE THIS bIRTHDAY CAKE BATTER POPCORN RECIPE:
- 1 bag Pop Secret® Movie Theater Butter
- 1 ½ cups white chocolate chips
- ⅛ cup vegetable oil
- 1 cup funfetti cake mix, can also use yellow or white mix
- ⅓ cup, rainbow sprinkles, divided
HOW TO MAKE CAKE BATTER POPCORN:
- Pop bag of popcorn according to package instructions. Pour bag of popcorn into big bowl and then scoop popcorn by hand into another bowl for mixing with ingredients. (this removes any unpopped kernels from the batch)
- Prep a cookie sheet or jelly roll pan with parchment or wax paper.
- Microwave chocolate chips in 30 sec increments (stirring each time), until chocolate is melting. Should take about a minute.
- Add vegetable oil to chocolate, stir well.
- Add cake mix and half of sprinkles to chocolate, stir to combine. Mixture will be thick at this point.
- Pour mixture over popcorn and combine gently. Hands are usually best for this job, just be sure to spray them with cooking spray first to help with the stickiness.
- Once popcorn is coated in chocolate, pour onto cookie sheet and add remaining sprinkles.
- Allow to cool & harden, then enjoy!
Start by popping a bag of popcorn. Tip: When making a popcorn mix like this, I like to pour the bag of popcorn into a bowl and then scoop it into another big mixing bowl to separate any un-popped kernels from the popcorn you’ll use in the recipe.
Prep a baking sheet (or even better, a jelly roll pan with raised sides) with wax or parchment paper.
Mix up the “cake batter” white chocolate by microwaving white chocolate chips and stirring in a little vegetable oil. The delicious buttery flavor of the popcorn tastes yummy with the white chocolate.
HANDY TOOLS NEEDED TO MAKE CAKE BATTER POPCORN:
- glass nesting bowls – many sizes, easy to clean, uses little cupboard space
- jelly roll pan – great size, nonstick, heavy duty
Add yellow, white, or confetti cake mix to the chocolate, plus sprinkles, and stir the mixture well. It’ll be pretty thick at this point. Pour over the popcorn and stir gently until all of popcorn is coated. I think hands work best for this job, just be sure to spray them first with cooking spray so the sticky popcorn is easier to handle.
Spread popcorn in a layer on the prepared cookie sheet. Add another small handful of sprinkles to the top. Allow to cool until crunchy, rather than sticky. Then it’s ready to go!
frequently asked questions
Is it healthy to eat popcorn?
Air-popped and eaten plain, popcorn is a healthy whole grain food that is low in calories and high in fiber, but oil-popped and flavored popcorn is a different story.
Can I eat popcorn on a keto diet?
Depending on your daily carb limit, popcorn may be able to fit into a keto diet.
Why does microwave popcorn taste different?
Microwave popcorn doesn’t have the advantage of fresh kernels, using coconut oil and flavacol (a specific popcorn salt).
