I love a unique avocado toast recipe. So simple to whip up and you can add fresh, seasonal ingredients to your liking. It’s an easy way to enjoy whole foods for breakfast, lunch, or a snack. I’m always looking for quick & easy recipes that fit into my busy life. Avocado toast is a super simple meal that I can make in minutes and feel good about eating.
Cobb salad is one of my all-time favorite dishes to order at a restaurant, and I knew the ingredients would be delicious on toast. I love to put a new twist on the classics.
- 2 slices, multi-grain toast
- 1 avocado, scooped
- 4 slices, Sara Lee® Oven Roasted Turkey Breast
- 1 hard-boiled egg, sliced
- 2 slices, chopped, cooked bacon (can also use pre-cooked bacon)
- 2 cherry tomatoes, chopped
- 2 Tablespoons, blue cheese crumbles, divided between the slices of toast
Top each toast slice with smashed avocado spread, 2 slices Sara Lee® Oven Roasted Turkey Breast, hard-boiled egg, chopped bacon, cherry tomatoes, and blue cheese crumbles.
