We have definitely embraced the Instant Pot in my household. It makes delicious meals in no time at all. So, when the days are busy and get away from me, I can still prepare a homemade meal!
No more fast food when I “run out of time”. Who am I kidding? There will still be fast food, but maybe not quite as often.
Ingredients needed to make this Pressure Cooker Teriyaki Chicken and Rice:
- 2 cups, quick cooking rice, any type
- 1 lb, chicken breasts
- 2 cups, teriyaki sauce (divided)
- 4 cups, frozen (or fresh) stir fry vegetables
- Optional, for topping: carrot, thinly shredded
Directions to make this Pressure Cooker Teriyaki Chicken and Rice:
- Place chicken in bottom of pressure cooker. Pour 1 cup of teriyaki sauce on top.
- Cook chicken for 12 minutes.
- Remove chicken from pressure cooker; place on cutting board.
- Add vegetables to pressure cooker; saute for 3-5 minutes or until tender crisp.
- Meanwhile, slice or shred chicken.
- Heat up rice according to package instructions.
- Serve bowls of rice with chicken, vegetables, and sauce on top. Add shredded carrots if desired.
