Yellow Curry with Chicken and Roasted Red Pepper
We love Thai food in our house and were thrilled to try out Blue Elephant Royal Thai Cuisine Yellow Curry Sauce! It is a pre-made sauce that is all natural and made in Thailand with 100% Thai ingredients.
Thai food is not hard to make from scratch, but in does involve a lot of spices and time. Sometimes a delicious, premade “cheat” is just what we need!
INGREDIENTS NEEDED TO MAKE Yellow Chicken Curry with Roasted Red Pepper:
- 1 package, Blue Elephant Royal Thai Cuisine Yellow Curry Sauce
- ½ cup, water
- 12 oz chicken breast, chopped
- 1-12 oz jar roasted red pepper, chopped
- handful of cilantro, chopped
- 2 cups, jasmine rice
HOW TO MAKE Yellow Chicken Curry with Roasted Red Pepper:
- Cook jasmine rice according to package instructions.
- In a saucepan, add 1 pouch (10.6 oz) of curry sauce and ½ cup of water. Bring to a boil.
- Add sliced chicken breast (12 oz) and roasted red pepper. Simmer until chicken is cooked through.
- Serve with jasmine rice, as well as lime wedges and cilantro for topping.
I like to cook chicken in the skillet because it turns out juicy and delicious. Heat up with the Yellow Curry Sauce and serve over jasmine rice. I top the final dish with chopped cilantro and a squeeze of lime. Yum!
