This recipe is so yummy and refreshing. Perfect on a hot summer day! And so simple to whip up. Just blend, pour, and freeze!
INGREDIENTS NEEDED TO MAKE KEY LIME PIE POPSICLES:
- ¼ cup, coconut cream (spoon out cream only, do not use liquid in can)
- 1 ripe avocado, scooped
- ½ cup, agave syrup (can also use maple syrup if preferred)
- ½ cup, lime juice*, or more to taste
- 1 Tbsp, vanilla extract
- 2 graham crackers, crushed– food processor is easiest
HOW TO MAKE VEGAN KEY LIME PIE POPSICLES:
- In a food processor, combine the coconut cream, avocado, agave syrup, vanilla extract, and lime juice. Blend until smooth.
- Pour into popsicle mold (do not add sticks yet), place in freezer for about 20 min.
- Sprinkle on generous amount of graham cracker crumbs into each popsicle mold and add sticks to popsicle.
- Freeze until set or about 1 hour.
- Tip! For easy removal, run warm water on the sides of the popsicle molds for 10 seconds, then gently pull pops out.
The great thing about this recipe is that it actually doesn’t take much time at all! A quick mix of the ingredients and then just freeze for an hour. You might not even need that long depending on your freezer! Unfortunately, they will be gone faster than you could blend the ingredients, but it is SO worth it.
