INGREDIENTS NEEDED TO MAKE INSTANT POT MUFFIN BITES:
muffins:
- 1 package, muffin mix (chocolate chip & blueberry are shown in the photos)
- ¼ cup, vegetable oil
- ¾ cup, water
- 2 eggs
glaze
- ¼ cup, powdered sugar
- 1 teaspoon water (add more or less for desired thickness of glaze)
HOW TO MAKE INSTANT POT MUFFIN BITES:
- Mix up muffin batter according to package instructions.
- Spray instant pot muffin pan with non-stick spray.
- Fill cups halfway with batter.
- Place trivet inside instant pot, add 1 cup of water for cooking.
- Place muffin pan on top of trivet, close up instant pot.
- Cook for 16 minutes, quick release steam.
- Carefully pull muffin pan out of instant pot with utensils and allow muffins to rest for 5 minutes.
- Meanwhile, whisk together powdered sugar and water in a small bowl, until blended.
- Pop muffins out of pan, serve with glaze drizzled on top.
