    Yummy muffin bites you can make in the instant pot! Drizzle these blueberry & chocolate chip mini muffins with glaze and enjoy as a fun breakfast or snack.

    You eat less calories if the food is mini, right? My family loves mini foods! I swear I could make the exact same recipe in “normal size” and they wouldn’t touch these muffins.

    The Instant Pot is really becoming by best friend on hotter days. It is so great to be able to make baked goods without the oven being turned on. The silicone molds for the Instant Pot are so adorable and amazing. There are many Instant Pot silicone mold recipes like eggs and brownies.

    INGREDIENTS NEEDED TO MAKE INSTANT POT MUFFIN BITES:

    muffins:

    • 1 package, muffin mix (chocolate chip & blueberry are shown in the photos)
    • ¼ cup, vegetable oil
    • ¾ cup, water
    • 2 eggs

    glaze

    • ¼ cup, powdered sugar
    • 1 teaspoon water (add more or less for desired thickness of glaze)

    HOW TO MAKE INSTANT POT MUFFIN BITES:

    1. Mix up muffin batter according to package instructions.
    2. Spray instant pot muffin pan with non-stick spray.
    3. Fill cups halfway with batter.
    4. Place trivet inside instant pot, add 1 cup of water for cooking.
    5. Place muffin pan on top of trivet, close up instant pot.
    6. Cook for 16 minutes, quick release steam.
    7. Carefully pull muffin pan out of instant pot with utensils and allow muffins to rest for 5 minutes.
    8. Meanwhile, whisk together powdered sugar and water in a small bowl, until blended.
    9. Pop muffins out of pan, serve with glaze drizzled on top.

    How do you use silicone baking cups in an Instant Pot? Lightly spray silicone cupcake liners with cooking spray and fill each cavity ¾ full with batter. You can use ramekins, mason jars, or a springform pan as well. Tightly cover the cupcakes with aluminum foil, and place your cupcakes onto the trivet. Follow directions for “baking” in the Instant Pot.

    This Instant Pot muffin pan is best for making muffin bites. They pop right out of the non-stick cups. Also works for egg bites!
