I really do love a good cheesecake, but they are so intimidating to make. With the careful baking and leaving it in the oven to cool– it can be really nerve-wracking. I love any version of cheesecake that is no-bake!
These cheesecake bites are the perfect way to make mini cheesecakes for a crowd. No mess, no fuss and oh so simple!
INGREDIENTS NEEDED TO MAKE NO BAKE CHEESECAKE BITES:
- 16 oz cream cheese
- â…” cup powdered sugar (can also use granulated sugar)
- 2 teaspoon vanilla extract
- 1 cup chocolate chips (or chocolate candy coating)
- 1 teaspoon vegetable oil
- 1 cup rainbow sprinkles
HOW TO MAKE NO BAKE CHEESECAKE BITES:
- In a food processor or mixer, combine cream cheese, powdered sugar, and vanilla extract until smooth.
- Lay out a sheet of wax paper onto small cutting board or plate.
- Using a tablespoon or mini cookie scoop* (see photo), scoop small balls of cream cheese mixture onto wax paper.
- Place balls in freezer.
- After about 20 minutes, remove half of balls** and roll in sprinkles. Place those bites in fridge.
- Heat up chocolate chips in microwave for about 1.5 minutes, stirring every 30 seconds.
- Add veggie oil to chocolate (helps make it smoother) and stir to combine.
- Using a spoon, dip remaining cheesecake balls (no sprinkles) one at a time into chocolate, rolling around to coat. Scoop out of chocolate with a fork, pausing a minute to let excess chocolate drip off.
- Lay out chocolate-coated bites on wax paper and place in fridge until chocolate is set.
- Enjoy cheesecake bites or save in fridge until ready to serve!
These bites are quite easy to make. Simply mix the ingredients, scoop into balls with your mini scoop, freeze*, cover in your favorite coating and enjoy!
*After you remove cheesecake balls from freezer, feel free to re-shape them into balls if they flatten at all.
Make sure you only roll the balls in chocolate once they are frozen or it will be a big mess!
