Whether you are making treats like these Cookie Dough RITZ Cracker Sandwiches, or crumbling them on top of a casserole you cannot go wrong!
I love taking a traditional food and making it EXTRA! We are all familiar with the RITZ Cracker sandwiches with peanut butter in the middle that seem to be a staple around the holidays. Well, I decided to change things up this holiday season and sandwich those delicious, flaky, buttery crackers between chocolate chip cookie dough! Yes, you read that right…COOKIE DOUGH!

Cookie Dough Bites
INGREDIENTS NEEDED:
- 24 RITZ Crackers
- 2 cups, chocolate chips
- 3 tsp, coconut or canola oil
- Optional: sprinkles for topping*
Chocolate Chip Cookie Dough
- â…› cup butter, softened
- ¼ cup, sugar
- â…› cup, brown sugar
- â…› tsp, vanilla
- 2 tablespoon milk
- ½ cup, flour
- pinch of salt
- ¼ cup, chocolate chips
Recipe Tips!
- Gently stir in chocolate chips into batter (rather than using mixer) to keep chips intact
- Using a fork, lift sandwich out of chocolate, and hover over bowl for a few seconds, until most of the excess chocolate drips off. You can also carefully scrap the bottom of the sandwich against the edge of the bowl to remove excess. This prevents “feet” on the cooke sandwiches.
- When heating the chocolate, you can use a double-boiler (stovetop) or microwave. If using microwave, be careful not to overheat. Microwave until about half of chips are melted and stir with fork or whisk to smooth out the rest.

Ingredients
- 24 RITZ Crackers
- 2 cups, chocolate chips
- 3 tsp, coconut or canola oil

Cookie Dough
- â…› cup butter, softened
- ¼ cup, sugar
- â…› cup, brown sugar
- â…› tsp, vanilla
- 2 tablespoon milk
- ½ cup, flour
- pinch of salt
- ¼ cup, chocolate chips
Instructions
- In a mixer, blend together the butter and sugars.
- Add vanilla and milk, mix to incorporate.
- Add in flour and salt, mix until just blended.
- Stir in chocolate chips.
- Lay half of RITZ Crackers out on parchment paper-lined baking sheet or cutting board.
- Spoon about a Tablespoon of cookie dough onto each cracker.
- Top with another cracker and lightly press down to make "sandwich".
- Heat chocolate chips and oil in small bowl in microwave, for about a minute, stirring halfway through heating time. Note: after a minute, chocolate may still look like chips, but a little stirring melts the chocolate completely. Try to avoid over-heating the chocolate.
- Drop a cracker sandwich into chocolate, use a spoon to coat sandwich in chocolate. Using a fork, lift sandwich out of chocolate, and hover over bowl for a few seconds, until most of the excess chocolate drips off. You can also carefully scrap the bottom of the sandwich against the edge of the bowl to remove excess. Gently drop the sandwich onto parchment paper. Add sprinkles, if desired.
- Repeat with rest of cracker sandwiches.
- Cool in fridge for 10 minutes.
- Serve or store in fridge for up to a week.

*Have fun with sprinkles-- red & green for the holidays or red & pink for Valentine's Day
