FAQs
Why is fudge crumbly? A lot of big crystals means you get dry, crumbly, grainy fudge. By letting the fudge cool undisturbed, you avoid creating seed crystals.
Why is it called fudge? Most believe the first batch was a result of a accidental “fudged” batch of caramels, hence the name “fudge”.
Can I use evaporated milk instead of condensed milk to make fudge? Unfortunately, there is no substitute for it in a fudge recipe. Be sure you do not confuse evaporated milk and sweetened condensed milk, as they are two entirely different products.

It may be the fat content of the chocolate chips. Next time, try adding powdered sugar or cornstarch & water) until you get a thicker mixture. That should set better.
