These Oatmeal Bars are extra yummy from the spices added. A splash of brandy (alcohol cooks out), plus allspice and cinnamon make for a more flavorful oatmeal cookie. And half and half adds a little bit of richness.

Instructions
- Preheat oven to 350 degrees.
- Cream butter and sugars together with mixer. Add eggs, extract, half and half, and brandy. Mix to combine.
- In a medium bowl, stir together dry ingredients, minus chocolate. Slowly add dry ingredients to wet, mixing to incorporate. Use spatula to scrape down sides of bowl as needed. Once fully mixed, add half of chocolate chips to batter. Stir gently to mix in.
- Line an 8×8″ baking pan with parchment paper or nonstick baking spray. Add oatmeal batter, using spatula to smooth out top. Sprinkle remaining chocolate chips on top of batter.
- Bake for 20-25 minutes or until corners are lightly browned and center is just cooked through. Remove from oven and rest for 10 minutes. Slice into bars and enjoy!
Substitutions
Brandy: is totally optional in this recipe. The alcohol does cook out, and it adds a depth of flavor. However, you can leave it out without missing it.
Half and Half: used in this recipe for a bit of added richness, but you could also use milk or cream
Allspice: you could also use mulling spices or a pinch of nutmeg instead
Oat Flour: if you prefer more of a soft texture, grind the oats up into a flour texture before adding to rest of ingredients. This makes for a yummy oat flour cookie bar.
