I love a unique avocado toast recipe. So simple to whip up and you can add fresh, seasonal ingredients to your liking. It’s an easy way to enjoy whole foods for breakfast, lunch, or a snack. I’m always looking for quick & easy recipes that fit into my busy life. Avocado toast is a super simple meal that I can make in minutes and feel good about eating.
INGREDIENTS NEEDED TO MAKE THIS AVOCADO BREAKFAST TOAST:
- 2 slices, multi-grain toast
- 1 avocado, scooped
- 4 slices, deli turkey
- 1 hard-boiled egg, sliced
- 1 slice, chopped, cooked bacon (can also use pre-cooked bacon)
- 2 cherry tomatoes, chopped
- 1 Tablespoon, blue cheese crumbles, divided between the slices of toast
HOW TO MAKE SMASHED AVOCADO TOAST:
- Toast up bread.
- Top each slice with smashed avocado spread, 2 slices deli turkey, hard-boiled egg, chopped bacon, cherry tomatoes, and blue cheese crumbles.
Cobb salad is one of my all-time favorite dishes to order at a restaurant, and I knew the ingredients would be delicious on toast. I love to put a new twist on the classics.
Start by mashing an avocado slice on a piece of bread. That’s your base. Top with deli meat and pick your Cobb Salad toppings from there!
