I am ready for all the things Fall. Once the pumpkin spice scent hits the air I am ready for all the soups, baked goods, and warm drinks. I had my first pumpkin spice latte today, so it is settled. Fall is here!
These apple fritter muffins are so good and so easy! With just 4 ingredients in the muffin mixture, you can whip these up in no time. Grab a couple more ingredients and you will have the glaze and topping ready to go as well!
INGREDIENTS NEEDED TO MAKE BAKED APPLE FRITTER MUFFINS:
muffins
- 1 box, yellow cake mix
- 1- 21 oz can, apple pie filling
- ½ Tablespoon, cinnamon
- 1 egg
cinnamon sugar topping
- ½ tablespoon cinnamon
- ½ tablespoon sugar
glaze
- 1 tablespoon powdered sugar
- Small splash of water (>teaspoon)
HOW TO MAKE BAKED APPLE FRITTER MUFFINS:
- Preheat oven to 325 degrees.
- Prep muffin pan with cooking spray– if you’ve never tried silicone muffin pans you must! So much easier to pop out the baked muffins.
- With a handheld or stand mixer, mix together cake mix, pie filling, egg, and cinnamon until just combined (scraping down the sides of bowl as needed).
- Using cookie/muffin batter scoop, fill muffin pan cups to ¾ full.
- Top (liberally) with cinnamon sugar mixture- you can make your own or buy it already mixed.
- Bake for about 17-20 minutes, or until a toothpick comes out with only a crumb or two.
- Allow to cool for 5 minutes.
- Meanwhile whisk up glaze. Tip! If powdered sugar isn’t blending well with water (little pieces of sugar visible), trying microwaving mixture for 5 seconds or so and stir again.
- Top muffins with glaze and serve! Muffins keep in fridge for 3-5 days.

I don’t see why not… you could drop the dough like biscuits into a skillet with oil. Cook both sides until golden brown. Let me know how it goes!
