mini sweet peppers
My top tip for hosting a casual get together at a moment’s notice– have refrigerated salsa ready to open & serve with your favorite dippers. It’s an instant appetizer that you know will be a hit.
Having a simple go-to plan for your get-togethers helps everything come together with less stress. I like to have a couple containers of fresh salsa in my fridge, plus some dippers like veggies and chips. From there, you can add drinks and maybe a heavier appetizer, and you’re all set.
Last week, we had an impromptu party when friends came over after the kids’ holiday concert. With my simple party plan, I was able to set-up some chips & salsa, plus drinks for adults and kids. We were all able to relax and chat while the kiddos played. We’re all in the same stage of parenthood, and casual is best. The authentic taste of this salsa works well in a small setting as well as adding a delicious twist to any of your favorite party dishes.
We love the bold flavor and knew it would be perfect on top of these mini stuffed peppers, another party staple of mine. It’s a quick-prep dish that everybody loves. You’ve got finger-food with loads of flavor. Plus, you can serve it with salsa and other yummy dips. So festive!

Ok, how to make mini stuffed peppers…Start with mini peppers in vibrant colors (orange, red, etc.), then slice off the top. Pick mini ones that would be a good “two-bite” appetizer. For best results, lay them down flat and slice off the curvy top.
Then, mix together ground beef (can be cooked in advance for quick prep) and Mexican-style cheese (or any shredded cheese in your fridge), then fill each mini pepper.
Pop them in the oven until the cheese melts (or about 10 minutes), and then top each with the bold salsa. The crisp texture of the salsa takes these mini stuffed peppers over-the-top. Such a fun appetizer to add to your party spread.
Plus, you only need four items to make them– mini peppers, ground beef, cheese, and salsa. I live for simple recipes, especially when I’m hosting! I always have a few quick appetizers in mind when I decide to have friends or family over, especially if it’s last minute.

Frequently Asked Questions
How do you eat mini sweet peppers raw?
While the seeds inside a bell pepper are edible, they have a slightly bitter taste that some may find unpleasant. To prepare a raw bell pepper, wash the skin well with water and dry it with a clean paper towel. Slice the pepper in half and twist out the stem and seeds.
Are mini sweet peppers the same as bell peppers?
Mini Sweet Peppers are a miniature version of the ordinary bell pepper, making them perfect snack-sized vegetables. Their flavor and texture are similar to a bell pepper, but sweeter and with very few seeds.
How long do mini peppers last?
Whole, uncut peppers will last for about 2 weeks. Once you cut them they will only last for 1-3 days.
