We’re hitting the 80’s & 90’s this weekend to kick off the summer, and I know we’ll spend all day outside. With tons of kids in the neighborhood, the best way to catch up with friends and family is to have a low-key BBQ and just relax.
I know a lot of busy parents hesitate to invite people over when they tied down by sports schedules, housework, or running after little ones. But I promise you, it’s possible to keep it casual & easy, even effortless if you have the right set-up.
INGREDIENTS NEEDED TO THROW TOGETHER A QUICK VEGGIE BOARD:
- 1 cup almonds, preferably Marcona*
- 2-3 cups, multi-grain crackers or nut-based crackers
- 1 tub, hummus, I recommend the roasted red pepper variety for extra flavor
- 1 cup, olives, preferably kalamata
- 2-3 colorful veggies**
- 1 lb block of cheese, sliced (rec. sharp cheddar or Parmesan)
Arrange all ingredients on a cutting board or tray. Add small serving-ware for guests to help themselves.
I love to do a simple drinks station, with a pitcher of iced tea or lemonade, plus cups and fun garnishes to add some festive touches. Then I’ll set up a few simple appetizers that I know are crowd-pleasers. There’re a few items from Walmart that I stock up on for weekend events during the summer. I keep these products on hand for quick (and tasty!) snacks to serve friends and family.
Multi-grain crackers are perfect alone or paired with other yummy snacks, like on a cheese board. Sometimes I put out small bowls of these, and other times I serve them with fresh fruit and veggies for snacking.
