Keto is a foodie and healthy lifestyle buzzword right now. What I’ve taken away from all of it is that focusing on whole foods and watching my intake of carbs and sugars makes me feel better. We could all use more energy!
Let me introduce to an easy, ket0-friendly dish we’ve been enjoying in our home– Steak Fajita Bowl. It’s full of flavor and packed with nutrients!
Ingredients for Steak Fajitas?
- 1 lb skirt steak, sliced in ½″ pieces, against the grain
- 1 yellow onion, sliced
- 1 red bell pepper, sliced
- 3 cups cooked cauliflower rice , can be homemade or store-bought

- Tex Mex toppings
How to cook Steak Fajitas?
- Heat oven to 400 degrees.
- Add meat and veggies to prepared sheet pan.
- Whisk up marinade, spread over sheet pan.
- Cook steak & veggies for 15-20 minutes, or until steak is cooked through and veggies are just tender.
- Heat up cauliflower rice and use as base for fajita bowls.
- Add steak and veggies on top, finish off with any desired toppings.
First off, stir up the lime marinade. Next slice the skirt steak and veggies (bell peppers and onions) and lay it all out on a sheet pan. Spread the marinade all over the pan.
Cook in the oven at 400 degrees for 15-20 minutes or until the steak and veggies are cooked through and just tender. Finish off by zesting lime all over the dish with a microplane.
To put a keto twist on fajitas, we use cauliflower rice! You can certainly make your own with a food processor, but I bought a pre-chopped bag to make the meal quick & easy. Heat up the “rice” and use it as the base for your bowl.
Add the fajita ingredients on top and finish off with any Tex Mex-inspired toppings! We love lime, avocado, cilantro, and sour cream, just to name a few. Keep it keto-friendly or not, depending on what your family enjoys!
