    cheese filled pretzel bites

Everyone has different food they consider their comfort food. In general, it is hearty and warm food. My favorite is cheese! Cheesy casseroles, cheese and crackers, cheese sandwiches, all the cheese!!

My favorite cheese is a SHARP cheddar. I just love the tang, and bite you get when you eat it. These pretzel bites are stuffed with cheesy goodness and then dipped in the best cheese sauce!

INGREDIENTS NEEDED TO MAKE CHEESE STUFFED PRETZEL BITES:

    pretzel bites

    • 1- 14 oz container, ready-made pizza dough
    • 8 oz Sharp White Cheese, cut into 12 small cubes
    • 1 Tbsp baking soda
    • 1 egg, beaten with a splash of water
    • 1 tsp of salt

    cooper® cheese ale pretzel dip

    • 2 cups, Sharp White Cheese, shredded
    • ⅓ cup, Pilsner beer

HOW TO MAKE CHEESE STUFFED PRETZEL BITES:

    1. Preheat oven to 425 degrees.
    2. Roll out pizza dough (if necessary) and use 3″ round biscuit cutter to make dough circles.
    3. Tuck a cube of cheese into each dough circle and roll up into a ball, pinching the edges closed.
    4. Lay out a sheet of parchment or wax paper on countertop.
    5. Bring 2 cups of water (or enough to cover the dough balls) to a boil in a saucepan.
    6. Sprinkle the baking soda into the water.
    7. Using a slotted spoon add the dough balls to the water and cook for 1-2 minutes, or until they puff up (if left in too long, they will lose their shape)
    8. Transfer dough balls to parchment paper (allows water to drain a bit), and then again to a prepared cookie sheet.
    9. Brush tops of dough balls with egg wash using pastry brush or spatula and sprinkle on salt.
    10. Bake for 12-15 minutes or until golden brown on top.
    11. Meanwhile, add cheese and beer to saucepan on stovetop. Heat on med/low and stir until smooth.
    12. Serve pretzel bites with dip and enjoy!
    pizza dough and cheese cubes

Once you cut your dough and wrap up the cheese cubes this is as easy as can be. Boil those pretzel balls up for a minute or two and then bake. Honestly, it really is so easy!

    cheese dip

While the pretzel bites are baking, you can mix up your cheese sauce by melting shredded cheese and beer together! Don’t worry about beer for the kids, alcohol burns off when cooked. However, you are welcome to substitute your favorite stock if you would prefer.

Your family is going to eat these as fast as you can make them. You will realize that perhaps a double (or triple) batch will best suit your family. This will easily become one of those recipes your kids will remember you making and will make for their kids too! Some of my favorite recipes from my mom are the simplest, no fuss recipes. They are the best!
