I love a good soup. I don’t mind the weather being hot, soup is just so good! I just struggle with the amount of time it takes to make most soup recipes. Then, in walks Chicken Fajita Soup, and problem solved!
The best part about this soup is that you can totally be prepared and get it in the slow cooker in the morning, or you can throw it in the Instant Pot in the evening. Either way there is literally no fuss!
INGREDIENTS NEEDED TO MAKE INSTANT POT CHICKEN FAJITA SOUP:
- 1 tablespoon butter
- 1 onion chopped (I love to use frozen chopped onion for easy prep)
- 2 green peppers, chopped
- 3 garlic cloves minced
- 6 oz cream cheese
- 1 lb boneless skinless chicken breasts
- 1-10 oz cans diced tomatoes with green chilis
- 1 can, black beans
- 2 cups chicken broth
- 1 packet of taco seasoning
HOW TO MAKE INSTANT POT CHICKEN FAJITA SOUP:
- Using sauté function on instant pot, cook green peppers, onions, and garlic in butter until softened (about 5 minutes), stirring frequently.
- Add cream cheese and break up with a large spoon, combining with the veggies. Heat until mostly melted, about 2-3 minutes.
- Add chicken, diced tomatoes, beans, chicken broth, and taco seasoning to instant pot. Cook for 20 minutes, then allow 5 minutes for pressure to slowly release.
- Remove cover and stir soup, breaking up chicken into bite-sized pieces.
Once you have sauteed and cooked the soup in your Instant Pot you can top with your favorite taco/fajita toppings like avocado and shredded cheese!
