Cookies Using Rolo Candies
Cookies are such a great dessert! They are already portioned, there are endless possibilities, and the kids can help make them. These Rolo Sugar Cookies are a great combination of a delicious candy, and a basic sugar cookie.
Another great thing is that you can roll it in any color sugar that suits the time of year, making them so festive!
INGREDIENTS NEEDED TO MAKE ROLO SUGAR COOKIES:
- ¾ cup (1 and ½ sticks) unsalted butter, softened
- 4 ounces cream cheese, softened
- 1 and ½ cups granulated sugar
- 1 egg
- 1 tsp, vanilla
- ½ tsp, butter extract
- 1 tsp, salt
- 3 cups flour
- 1 (7.6) oz package, UNWRAPPED Rolo candies
DIRECTIONS TO MAKE ROLO SUGAR COOKIES:
- Preheat oven to 350 degrees.
- Cream together butter and cream cheese, scraping down sides of bowl as needed.
- Add sugar and mix until you reach a fluffy consistency.
- Add egg, vanilla extract, and butter extract, mix to combine.
- In a medium bowl, whisk together flour and salt.
- Add dry ingredients to butter mixture and mix until just combined.
- Prep a baking sheet with parchment paper.
- Using small cookie scoop, spoon out dough and roll into 1 ½″ balls (eyeball it) and tuck one Rolo candy inside each, pinching dough to seal it back up.
- Bake for 11 minutes or until just set in middle.
- Allow to rest for 5 minutes, then enjoy!
Rolos used to always come individually wrapped in foil, like Hershey Kisses. This was the very worst part of making any cookie with Rolos, but they have come out with a bag that is UNWRAPPED! Boom! If you bought the wrapped one just make the kids do that part.
Mix up your dough, and scoop out with your cookie scoop. Press a rolo in the center and then wrap the dough around, concealing the rolo. This is where you would roll in colored sugar – if you want. Bake and enjoy (perhaps cool for a minute first)!
