Ingredients
- Cooking spray or 1 teaspoon butter
- ¼ cup pizza or spaghetti sauce, plus more for serving/dipping
- 2 flour tortillas, medium size
- 1 ¼ cup shredded cheese, Italian blend, divided
- ½ cup, pepperoni
- Italian seasoning for topping (if desired)
Instructions
- Heat a medium-sized, nonstick skillet to med-low on the stove-top. Nothing will stick to this pan!
- Spread ¼ cup of pizza sauce evenly on one side of both tortillas.
- Prep skillet with cooking spray or butter.
- Assemble quesadilla on skillet--tortilla, ½ cup of the cheese, most of the pepperoni, another ½ cup of cheese, tortilla on top.
- Cook one side until edges get crisp & cheese is melted (about 2-3 minutes).
- Press top gently with spatula to keep quesadilla together, then flip over.
- Top quesadilla with remaining cheese & pepperoni, and heat until cheese on top is just melted.
- Flip over (once more) and cook for about a minute until topping is melted and crispy.
- Remove from heat and place on plate, cheesy topping side up. Sprinkle on Italian seasoning if desired.
- Slice into pieces with a pizza cutter and serve with a cup of pizza sauce or marinara for dipping.
