We love American classics in my house! Give us a good BBQ anytime and we’ll invite all the neighbors! I’m always collecting simple potluck dish ideas to serve to a crowd.
This one is so easy to make, and has all the flavors of a summer favorite– cheeseburgers!
I was inspired by peeking into my pantry and seeing a few cans of RO*TEL that we keep around for all sorts of summer recipes… tacos, dips, grilling out, etc. I immediately thought of adding a little bit of boldness to a cookout classic.
INGREDIENTS FOR THIS KETO CHEESEBURGER SALAD RECIPE:
- 8 cups, chopped romaine lettuce (about 2 bags)
- 1 lb, ground beef, seasoned* & browned
- ¼ cup, chopped onion
- 1 can, RO*TEL, drained
- 1 cup, shredded cheddar cheese
- ¼ cup, mayo
- ¼ cup, ketchup
- *1 teaspoon, ground beef seasoning
DIRECTIONS TO MAKE THIS KETO CHEESEBURGER SALAD RECIPE:
- Layer in a large salad bowl: lettuce, ground beef, onion, RO*TEL, and cheese.
- Whisk together mayo and ketchup.
- Pour dressing over salad, serve immediately. (ground beef can be cooked ahead of time, for quicker meal prep)
I like the idea of layering cheeseburger ingredients on top of a salad, to lighten things up for summer. You can add a variety of toppings depending on what everyone likes on their burgers.
Plus, it can be doubled as a main dish or served as a side. Love that!
After you brown up the ground beef, the rest of the recipe takes minutes. Just layer on the toppings, and add the dressing.
You could even cook up the ground beef a day or two before the party, and add the ingredients in a bowl right before serving. So easy!
